| Customer Reviews: Single bevel, hollow ground sushi knife February 12, 2010 Michael A. Duvernois (Minneapolis, MN United States) It's a beautiful thing. Sharp, well-balanced, and cutting the thinnest slices, the food falls away off of the knife. It's a good professional chef's knife for Japanese style food preparation. Though it keeps its edge pretty well, you're going to need to learn how to sharpen a single-bevel knife to keep that super-crazy-sharp edge that's the reason to spend the money on a Shun in the first place.
great knife!! June 25, 2010 sarah d This was a gift for my husband's birthday. I purchased five knives he could use when making sushi with the intent of giving him the option to choose which knife he wanted. We have an extensive collection of other knives, yet this is our first knife with the intent of making sushi.
He had been looking at the Kyocera Kyotop Damascus Pakka Handle 8.25, which was one of the options and the one I thought he would go with. Yet, he went with the Shun Pro 9-1/2-Inch Yanagiba Knife because of the way it felt (weight was good), great blade length, and it does a great job cutting fish. The blade is thinner than the Kyocera. The Shun Pro 11-3/4 was too heavy. The Shun 9-1/2 is at a lower price point than both, yet he didn't know this so it was not a deciding factor for him.
Cutting the fish and veggies is easy. Making the sushi rice... not so much! :) Yet, we are still in the learning/experimenting phase. :)
